1) You could watch the video thru a mirror, seriously!
2) Stand across a small body of water at 45 degree angles with a buddy who knows how to demo the casts you want to learn. The 45's let you cast diagonally past each other while standing fairly close so you can communicate. As you watch him, you will see things happening in a virtual mirror. It's easy for humans to imitate the motions you see in this fashion, and this is a popular technique for teaching karate students their 'moves'.
I am a definite proponent of casting from both sides. Hopefully you will find someone in your area who can show you from your perspective.
