We all use them but little though goes in as to how many of the 'high end' ones are made. Darned interesting watch (right now); pretty easy to see why these things can cost hundreds of dollars. It takes some serious computer run milling machines to turn one of these things from a block of Aluminum to a finished product.

In the shop I work at, Aluminum can be either a complete dream or a complete nightmare. Aluminum is easy on inserts, so keeping tolerances is relatively easy, but since it's so soft, it is hard to hold it well without pinching and squeezing it. It's also very easy to scuff and mark up!
