Most of the rivers nearby will mainly be catering for regular weekly lets at that time of the year. If you are just after a day or two fishing, I would try some of the nearby association beats.
To the north of Dornoch there is the Kyle of Sutherland association water, which consists of the tidal reaches of the Oykel, Carron, Cassley and Shin rivers, this can be excellent if there is a dry spell and the rivers are low. You can pick up day ticket for here at the local store just south of Bonar Bridge. Further north there is the association water on the Helmsdale, ticket for this are available from Helmsdale Tackle in Helmsdale.
To the south there are the association beats on the Ness and the Beauly. Ticket for the Ness are available from Graham's Tackle Shop in Inverness and the last I know, tickets for the Beauly were available from the Ironmongers shop in Beauly.
