I was there this same time last year. Any trout fishing you will be looking for will be in the snowy mountains region, almost half way between Sydney and Melbourne. The town of Jyndabyne will have the most opportunities, with multiple rivers and lakes a short drive from town. Small rivers down to small streams mostly, no double handed stuff to speak of.
The trout fishing was alright, but being from BC it didn't interest me much. That being said the salt water fishing can be unbelievable. I fished for Kingfish (Yellow tail jacks in California and Mexico), and they were a blast. Little ones were 5+ pounds and big ones get over 30 pounds. I couldn't land anything over 20Lbs, they just tore up tackle and broke you off on the rocks.
If you contacted one of the guides working out of Sydney they could get you out for the day. The program is to live bait with a rod and hook one up, then look for trailing fish following it. Once they get close to the boat you bait and switch and chuck flies to the other interested fish. These things make steelhead seem like wimps.
Have a look at some guides in Sydney and contact a fly shop to see if they can recommend a guide for you. I did it myself from shore and with friends boats and it was great.
